The former Venetian star heads back to Lake Las Vegas

Proof Tavern at Lake Las Vegas has been in the works since last August and just ahead of an early April debut the restaurant hired a high-profile chef returning to the exact same kitchen that started his local career.
Joining 15 video poker machines and a gaming tavern atmosphere, chef Jon Littleton will be creating Proof’s “upscale American cuisine” menu inside the 6,440-square-foot Montelago Village space, most recently occupied by Brooklyn’s.
Littleton’s career includes a prominent stint as an executive chef at the Venetian resort, beginning with B&B Burger and Beer in 2013, followed by B&B Ristorante, then a promotion to Carnevino in 2016. Prior to the jump to the Strip he was executive chef of the Black Pepper Grill, in the same building that now houses Proof Tavern.
